Instructions
Step 1
Roast eggplant over fire until all moisture has evaporated, about 5-10 minutes per side
Step 2
While eggplant is roasting, mince garlic cloves
Step 3
Remove blackened eggplant and smash onto plate
Step 4
Add garlic on eggplant and add the juice of 1 lemon
Step 5
Sprinkle salt and pepper to taste
Step 6
Drizzle raw tahini over whole eggplant dish
Step 7

Serve with a side of warm hummus and dig in!
