Instructions
Step 1
In a large saute pan or wok over medium-low heat oil. Add anchovy and garlic (unpeeled) and saute until anchovy melts into the oil, stirring occasionally to prevent garlic from scorching.

While garlic and anchovy are sauteing, bring salted water to a boil in a large pan, add pasta and cook until al dente, about 10 minutes, depending on the pasta. Drain but reserve the pasta water.

Stir in vegetables and let simmer on low, stirring occassionally to prevent sticking, for about 10 - 15 minutes depending on the vegetable or vegetables. Remove skins from garlic cloves and break up cloves into tiny pieces, almost to a mash. Add more oil, a tablespoon at a time as needed.
Step 4
Add pasta and 1 cup pasta water, and combine.
Step 5
Add soft cheese if using, and stir in, allowing to melt into pasta. Add cream if using, once the cheese melts. If the pasta mixture starts to stick to the pan, add more pasta water.
Step 6
Once the cheese and cream are incorporated, add the grated hard cheese if using, stirring in gently.
Step 7
Sprinkle chopped parsley over top, and serve immediately.
