3 tbpSoybean paste 黄豆酱
1 tbp甜面酱
3Green onion
green part, chopped, white part, thinly julienned
4cloves Garlic
2eggs
red pepper oil
Cucumber
thinly julienned
Instructions
Step 1
Heat oil on high until smoking. Beat eggs vigorously to incorporate air. Pour mixture in, wait for 1 sec, turn off heat, tilt wok to let the rest of the liquid eggs to touch the wok while stirring in circular motion to beat the eggs into pieces. Set aside.
Step 2
Add more oil. Fry minced garlic and chopped green onion til fragrant on low. Stir in bean paste and fry on low, until the paste was a bit separated with oil.
Step 3
Stir eggs in and mix. Add a few tbp of water and turn heat to high to reduce until thickened.
Step 4
Boil noodles. Save about 1/4 cup of water. Strain noodles and separate into bowls. Put back 1/8 cups of water each.
Step 5
Spoon over 2 big spoonful of sauce. Garnish with julienned green onion, cucumber and red pepper oil.
