Instructions

Preheat oven to 350°F

Step 1
Very lightly grease a baking sheet or line with a baking mat.
Step 2
In med. bowl, whisk together flour, baking soda, & salt. Set aside.
Step 3
In lg. bowl cream together butter, peanut butter, & sugars ( 2-3 min.) until light & fluffy. Mix in egg & vanilla until blended.
Step 4
Add dry ingredients to wet ingredients; mix until combined (do not over mix). Roll dough into balls (lg. cookie scoop (3T).
Step 5
Roll cookie dough balls in remaining 2T sugar; place on baking sheet 2”-3” apart. Use a fork to gently press a criss-cross pattern into each cookie dough ball, only pressing ball down about half way.
Step 6
Bake (8-9 min.) (DO NOT OVER BAKE) cookies should just begin to crack on top. Cool (1-2 min.) on baking sheet; transfer to cooling rack.

Notes

Step 7
Store in airtight container at room temp, (up to 5 days). (They are softest on day 1 & 2!).
