Instructions
Preheat oven to 350°F
Step 1
Line two baking sheets with parchment paper.
Step 2
In lg. bowl, cream together softened butter & sugars; beat until totally combined & smooth (2-3 min.)
Step 3
Add peanut butter & vanilla; beat until combined. Add egg; beat until just combined.
Step 4
Sprinkle flour, baking soda, & salt over mixture; use spatula to fold everything together until combined & no streaks of flour remain. (The dough will be soft and a bit sticky.)
Step 5
Using 1/3C scoop, scoop/measure about 7 cookies. Place on cookie sheets 3" apart.
Step 6
Use fork to gently press down dough in one direction & then other for a cross-hatch design.
Step 7
Bake (14-16 min.), one sheet at a time, until the cookies are lightly crackled on top and the edges are turning golden. (Don't overbake.)
Step 8
Cookies will be puffy, but will flatten as they cool. Cool on baking sheets (10 min.); transfer to cooling rack to cool completely.

Step 9
Keep the cookies at room temp. in an air-tight container (up to 3 days.)
Step 10
To store the cookies longer, pop them in the freezer (use a freezer safe container or zip-top bag); keep (1-2 mo.)
