Instructions

Step 1
1. Preheat oven to 350 degrees and coat a 9 x 5 inch loaf pan with cooking spray
Step 2
2. Cut five 1/8 inch rounds from the center of the zucchini and set aside. Diced the rest of the zucchini.

3. Cut two 1/8 inch rounds from the center of the cheese and dice the rest. Refrigerate the rounds and diced cheese separately

4. Cook bacon in a medium skillet for five minutes. Add the diced zucchini and cook, stirring occasionally until the zucchini is tender and the bacon is starting to brown, 3 to 5 minutes. Transfer to plate and let cool for 5 minutes

5. Meanwhile, whisk flour, baking powder, salt and pepper in a large bowl
Step 6
6. Whisk eggs, milk and oil in a medium bowl. Make a well in the center of the dry ingredients and add the wet ingredients. Whisk until the batter is smooth

7. Fold in the zucchini mixture and diced cheese until combined. Pour the batter into the prepared pan and smooth the top
Step 8
8. Arrange the rounds of zucchini and goat cheese on top of the loaf
Step 9
9. Baking to the top is browned and toothpick inserted in the middle comes out clean, about 45 minutes
Step 10
10. Cool in the pan for 10 minutes then turn on to a wired rack. Let cool for at least 30 minutes before slicing
