Tofu Tacos

Hi there, taco fans! Are you ready for a mouthwatering and easy vegan taco recipe? Today I'm going to share with you how to make tofu tacos that are full of flavor and texture. You won't believe how good these are! Tofu is a wonderful plant-based protein that can absorb any seasonings you want. For these tacos, we're going to use a combination of Taco seasoning, pineapple juice, salt, coriander powder and cumin powder. Then we're going to air fry the tofu until it's chewy and crisp. To make the tacos, we're going to use small corn tortillas and top them with fajita peppers and onions, Taco bell Chipotle sauce, and salsa. You can also add any other toppings you like, such as guacamole, vegan sour cream, or cilantro.

Instructions

Step 1
1.Cut the tofu into 1/2 inch cubes and place them in a large bowl.

2. In a small bowl, whisk together the taco seasoning, pineapple juice, salt, cumin powder, and coriander powder.

3. Pour the marinade over the tofu and toss well to coat.
Step 4
4. Spray some oil spray in the air fryer, spread the tofu in an even layer in the air fryer

5. Airfry tofu for 20 minutes, flipping halfway through, until golden and crisp.

6. While the tofu is baking, slice the bell peppers and onion into thin strips.

7. Heat some oil in a large skillet over medium-high heat and cook the peppers and onion for about 15 minutes, stirring occasionally, until soft and charred.

8. Add salt, paprika, sirracha sauce, and lemon juice to add some flavor. Then add coriander leaves.

9. Warm the tortillas in a skillet over medium heat or in the microwave for a few seconds.

10. To serve, fill each tortilla with some tofu and top with peppers and onion, cheese, and salsa. Enjoy!
