whisked
1 cupwholemeal flour
2 tspbaking powder
1brown onion
small, diced
2zucchinis
large, grated
1 ½ cupsbaby spinach leaves
sliced
150gmushrooms
sliced
⅓ cupsliced olives
10sundried tomatoes
sliced
3 rashersbacon
diced
1 cuptasty cheese
grated
¼ cupextra virgin olive oil
Sea salt flakes
black pepper
12cherry tomatoes
halved
Instructions
Step 1
Preheat oven to 180 degrees Celsius.

Step 2
In a large bowl, whisk together the flour and baking powder. Slowly add the whisked eggs. Then add zucchini, spinach, mushrooms, onion, sundried tomatoes, olives, bacon, olive oil, and cheese, season with salt and pepper and gently mix together.
Step 3
Pour into a lined lasagne dish tin or cake tin and flatten down with a spoon or spatula. Top with the halved cherry tomatoes in rows (flesh side facing up).
Step 4
Bake in the oven for approx 40 mins at 180 degrees Celsius, or until a skewer comes out clean and the edges of the slice are lightly golden.
