Beetroot, Sauerkraut and Watercress Sandwich

I used quite a bit more cumin and added ground coriander, a lot more tahini, and some lemon juice. Oh, and there was cooked red cabbage in with the beets in this case. I cooked the canned chickpeas a little more, to make them softer.

Step 1
Put cooked beets, chickpeas, spices, vinegar and tahini in food processor and blend til smooth. Season to taste
Step 2
Layer on bread: beet spread, sauerkraut, cucumber, dill and watercress
