Instructions

Step 1
1. Boil 3 roma tomatoes, garlic, and 1/2 of the onion until the tomatoes blister.
Step 2
2. Once cooked, add vegetables to a blender with 3/4 c Greek yogurt, 1/4 c chicken broth, chipotle peppers (the more, the more spicier the sauce will be), and 2 tbsp chicken bullion or salt.

3. Once blended, put to the side.

4. Chop chicken in 1 inch cubes and the remainder of the onion.
Step 5
5. In a greased pan, add the chopped chicken and cook for 4 minutes.
Step 6
6. Add onion and combine well. Cook for an additional 5 minutes.
Step 7
7. Add in the sauce and cover. Cook for 10 minutes.
Step 8
8. Fold in cheese and seasonings to taste. Once the cheese is melted, turn off the heat.
Step 9
9. Serve with side of choice. Every meal gets 1.5 c chicken mixture and .75 c beans.
