600 gramschicken
chopped

3 stalkslemongrass
smashed

1onion
sliced

3kaffir lime leaves
torn into pieces

200mlcoconut
thick

50mlevaporated milk

50mlwater

3 Tbsplime juice

½ tspsalt

½ tspsugar

5 Tbspcooking oil

Instructions
Step 1
Heat oil in wok. Fry lemongrass and onion until fragrant.



Step 2
Add blended spice ingredients. Stir and fry until fragrant and oil rises.

Step 3
Add chicken and fry for a while. Leave to cook uncovered for 5-6 minutes.

Step 4
Pour in coconut milk and water. Simmer over medium low heat for 10-15 minutes.


Step 5
Add evaporated milk, kaffir lime leaves and lime juice. Cook for another 1-2 minutes.



Step 6
Add salt and sugar.
