cooked, prefer: day-old rice or cooled

2 Tbsppeanut oil

16shrimps
or chopped tofu/meat of choice

2eggs

1 Tbspsoy sauce
sweet

1 Tbspoyster sauce

4cloves garlic
minced

4Thai shallots
sliced

4 stalksChinese broccoli
aka kai-lan, sliced

Preparation
Step 1
Steam rice (best: one day in advance; or cooled) and prepare prik nam pla
Step 2
Wash and cut/prepare all ingredients for the stir-frying
Stir-frying
Step 3
Heat up wok to medium/high heat and add oil
Step 4
Stir fry garlic and shrimp (or tofu/meet)
Step 5
Stir in half of the rice
Step 6
Scoot to side, add eggs, scramble, stir egg until done, then mix with rice
Step 7
Stir in remaining rice; add soy and oyster sauce and mix
Step 8
Turn off heat and stir in Chinese broccoli, shallots and spring onion
Serving
Step 9
Serve with wedge of lime and prik nam pla
