1red chillies
deseeded and finely chopped

thickly sliced

4vine tomatoes
large, roughly chopped

1 Tbsptomato purée

200mlstock
made with 1 tsp vegetable bouillon powder

1cinnamon stick

500gcourgettes
medium-sized, thickly sliced

15gfresh coriander
chopped
lemon rice
For the

1 Tbspolive oil

½ tspbrown mustard seeds

240gbrown basmati rice

½ tspturmeric

12curry leaves

400gcan chickpeas
drained

2 Tbsplemon juice
Instructions
Step 1
Stir in the courgettes, then cover and cook for 10-12 mins until the courgettes are tender rather than soft. Stir in the fresh coriander.
