Step 1
Wisk together water, soy sauce, sherry, sugar, ginger, and sesame oil and set aside.
Step 2
Heat vegetable oil on high in a non-stick skillet until smoking. Add asparagus and mushrooms, cook stirring occasionally 4-5 minutes until asparagus starts to brown. Add sauce and cook 2 more minutes until pan is almost dry and asparagus is crisp-tender. Remove from heat. Add cooked brown rice and toss to combine. Season with pepper. Top with scallions, serve.
Step 3
*tip: as this is cooked super fast on high heat, I recommend wearing oven mitts to avoid getting popped by the hot oil when adding your veggies and sauce.
