For the Salad
1 Tbspextra-virgin olive oil

Dressing
Instructions
Step 1
Heat the oven to 400 degrees. Toss the chickpeas with 2 tbsp of olive oil. Season with a pinch of salt and pepper.
Step 2
Bake until the chickpeas are browned and crispy, about 20 minutes, stirring halfway through. Set aside.
Step 3
In a large bowl, add the kale and caesar dressing. Using your hands, massage the kale until slightly softened.
Step 4
Add the lettuce, tomatoes, and half the roasted chickpeas. Season with 1 tsp of salt and pepper.
Step 5
Sprinkle with parmesan cheese. Top with remaining roasted chickpeas.
Step 6
Add a bit of black pepper over the salad, and serve.
