6 ozground turkey
raw lean
½ tspgarlic
minced
½ tspitalian seasoning
¼ tspparsley
dried
¼ tspsalt
¼ tsponion
dried minced
⅛ tspground black pepper
⅛ tsppaprika
fennel seeds
red pepper flakes
½ cupmushrooms
chopped
½ cupgreen bell peppers
chopped
¼ cupred onions
chopped
¼ cupblack olives
sliced
1 ¼ cupself-rising flour
⅔ cupgreek yogurt
non-fat plain
1 Tbspwater
½ cuppizza sauce
traditional
1 cupmozzarella cheese
low-fat, shredded
Instructions
Step 1
Preheat oven to 450 degrees.
Step 2
Add the ground turkey to a greased skillet. Cook over medium heat until browned. Add all the seasonings and stir until well combined. Chop the veggies then add them to the skillet with the turkey; cook until tender. Transfer to a bowl and weigh the mixture. Divide the weight by the number of servings.
Step 3
Place the self-rising flour, Greek yogurt and water into a mixing bowl. Knead until well combined. If the dough is too dry, add a little water. Weigh the dough and divide it into equal balls (one per serving). Flatten each ball and roll out thin into a circle.
Step 4
Place 2 Tbs. of the sauce and 2 Tbs. of the cheese into the middle of each dough round and fill with one serving of the turkey mixture. Fold the edges of the dough up over the top of the mixture and pinch together. Place the popovers seam down into the muffin tin. Bake for 15-20 minutes. Enjoy one popover per serving.
