Instructions

Step 1
Open up the fillets lengthwise without spliting on one side to help the folding. Flatten up the fill with either a pin roll or a hammer. Season with the salt, black pepper.
Step 2
In a blender, add the cheese of choise, the single cream and egg. Blend. Add the parsley. You should have a thick paste. If too thin add more cheese. Reserve in the fridge.
Step 3
Mix the curry powder and flour in another plate. Put the white eggs in another plate. Mix the the breadcrumbs with the almond powder in a plate.
Step 4
Back to the fillets, top the fillets with the ham or meat of choice, add a tablespoon of the cheese mixture. Close the fillet and fold slightly on the edgecto prevent the filling from coming out. Use toothpicks to help keeping the meat folded if needed
Step 5
Cover the fillets in flour, drench In the white egg and then cover with the breadcrumb mix
Step 6
Pre heat the oven at 180 C.
Step 7
Warm up the butter and oil in a pan, once hot, add the cordon bleu fillets and fry until golden on both sides, add more butter if needed. Once golden, transfer to a tray and cook in the oven for 6 / 7 min
Step 8
Serve
