Apple Berry Citrus parfait

My favorite thing to do in the summer.. try out different combinations of fruity, fresh flavors to snack on. Here is one with berries, apples, and oranges.
- Berry compote
The pectin in berries will gel as it cools. I didn't need any corn starch. You can use this compote as a topping on pancakes, waffles, or ice cream too!
- Apple citrus salad
Honestly, you could just make this apple-citrus salad, add some granola to it, and call it a snack!
- Yogurt and granola of your choice.
Use vegan options if you prefer.
I wish I had some of my own homemade yogurt instead of the sweeter blueberry Chobani we picked up on our road trip, but it worked out just fine. I'd still prefer and recommend an unsweetened yogurt. Let the fruits shine in their sweetness.

Instructions
Step 1
Microwave 1/2 cup chopped strawberries, 1/2 cup blueberries, and 2-3 tbsp of maple syrup for 2 minutes at a time until the strawberries are soft.
Step 2
Let the mixture cool, then add in the same amount of uncooked berries for some crunch.
Step 3
Mix together 1 chopped apple, 1 chopped orange, zest and juice of 1/2 a lime, 1 tsp cinnamon powder, and some chopped mint leaves. Let it sit for some time.
Step 4
Layers the berries, yogurt, granola, yogurt, apple citrus salad, granola, and mint to garnish
