Instructions

Step 1
Clean and cut the potatoes into fours and bring them to a boil. When they are soft enough to split with a fork mash them in a bowl. Usually it takes 30 mins to boil.

Add in your three eggs and mix well, add in your 1/4 cup of flour and mix again before adding in your cheese, bacon (optional), and onion ( also optional). Side note, you do not have add bacon or onion, also you can choose really any cheese with this and feel free to experiment with this recipe

Flour a surface and in a small bowl pour a small amount of flour into it so that you can re-flour as needed without containing your bag of flour because there is egg in the mixture. With floured hands take a fistful of potato and pat out like a burger patty or the shape of a pancake. I floured a separate plate to try and contain the mess.

In a heated pan oil it, if you have a iron skillet, this is it calling, use it. But if not it will still taste amazing, I'm just biased. Lay them spaced apart and you can press them down with the spatula if they are a bit round so that the middle can cook. And just fry them until they are a nice crisp color on both sides and serve.
