Ingredients

2 lbsground beef
80/20

1 lbItalian bulk sausage
spicy or mild

3 Tbspolive oil

1yellow onion
large, chopped

1green bell pepper
chopped

1red bell pepper
chopped

2jalapeno peppers
chopped

3celery stalks
chopped

1can of black beans
with liquid

15 ozcan chick peas
drained, garbanzo

1can dark red kidney beans
drained

28 ozcan diced tomatoes
with liquid, or fire roasted tomatoes

1 x 6 ozcan tomato paste

15 ozcan whole kernel corn
drained, optional

2 Tbspsoy sauce

4cloves garlic
minced

1 Tbspdried oregano

2 tspground cumin

1 tspdried basil

1 tspsalt

1 tspground black pepper

2 tspcayenne pepper

1 tsppaprika
or smoked paprika

¼ cupchili powder

4bay leaves

1 cupBeef broth
or chicken broth, or dark beer
Instructions
Step 1
Prep the dry ingredients in a bowl. Oregano, cumin, basil, salt, black pepper, cayenne pepper, paprika, chili powder, bay leaves. Mix together.
Step 2
In a large pot heat olive oil on high. Throw in the ground beef and Italian sausage and toss until evenly browned.
Step 3
Lower heat to medium and add the canned tomatoes, tomato paste, veggies and all the beans to the pot.
Step 4
While stirring, sprinkle in the dry ingredients, the bay leaves and the soy sauce.
Step 5
Simmer for at least 2 hours stirring occasionally. If mixture looks a little dry, add 1/2 - 1 cup of broth (beef or chicken). You can also use your favorite dark beer. As the Chili simmers, the ingredients will release moisture so DO NOT add too much or it will become a soup. NOTE: Beer should not be added near the end of the cooking because the alcohol needs time to evaporate
Step 6
Optional: Add whole kernel corn to the pot about 30 minutes before serving.
