Instructions
Step 1
Cut the meat along the grain into in 1-inch wide strips
Step 2
Sprinkle seasoning mixture lightly in bottom of a dish
Step 3
Lay meat into the dish without any of the pieces touching
Step 4
Sprinkle seasoning lightly on top of the laid out meat
Step 5
Leave the meat out and uncovered for 6-8 hrs then turn the pieces over
Step 6
Sprinkle more seasoning lightly on top and leave for another 6-8 hours
Step 7
Bring a pot of water + 1/2 cup of distilled white vinegar to boil (enough water to submerge a piece of the meat you've cut)
Step 8
Put a hook in each piece of meat and dip in the boiling water for 3 seconds
Step 9
Hang all the meat in a biltong box to dry (usually 5-7 days depending on temperate and air flow)
