Instructions
Step 1
Chop up the chorizo in to circular pieces then quarter them. Use as much as you want I used about 1/4 of the sausage for 1 person.
Step 2
Chuck the chorizo in a pan
Step 3
Then cut spinach leaves to into small strips
Step 4
Add the spinach
Step 5
Cook for 4 mins or so and then whisk 3 eggs and add to the pan.
Step 6
Stir the egg in or cook it like an omlete. Serve with salt and pepper. Basil is optional
