Toffee apple, pork and cheddar burgers

Step 1
You need: pepper, salt, sugar, vegetable oil

Instructions for 2 [for 4] Preheat the oven to 220°C/200°C (fan)/ 425°F/ Gas 7
Step 5
Chop all of the potatoes (skins on) into thin chips, then add them to a baking tray with a generous drizzle of vegetable oil and a pinch of salt

Give everything a good mix up and put the tray in the oven for 20-25 min or until crisp
Step 7
Meanwhile, grate the apple[s] Peel and chop the red onion[s] in half
Step 8
Dice half of the red onion finely and slice the remainder
Step 9
Add the diced red onion and half of the grated apple to a bowl with the pork mince, panko breadcrumbs and a pinch of salt and pepper
Step 10
Give everything a very good mix up until fully combined (clean hands is the best way!)

Divide the pork mix into 2 [4] and shape into patties
Step 12
Cut the cheddar cheese into 8 [16] pieces
Step 13
Top the middle of each patty with 4 pieces of cheddar and seal them in with the pork (make sure there are no gaps) - these are your cheese-stuffed patties

Add the cheese-stuffed patties to an oiled baking tray and put the tray in the oven for 15-20 min or until cooked through (no pink meat!)
Step 15
Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a medium heat

Once hot, add the sliced red onion with a pinch of salt and sugar and cook for 6-7 min or until beginning to caramelise
Step 17
Once caramelised, add the balsamic vinegar, remaining grated apple and onion marmalade and cook for 2-3 min further until sticky - this is your toffee apple & caramelised onion jam

Once the chips have 5 min left, top them with the shredded kale

Add a pinch of salt and a drizzle vegetable oil and return the tray to the oven for 5 min, or until it's crispy - this is your crispy kale

Cut the ciabatta roll[s] in half

Once the burgers have 3-4 min left, add the ciabatta to the tray and return the tray to the oven until hot and crusty
Step 22
Add a dollop of ketchup to each ciabatta base

Top with a cheese-stuffed patty, a spoonful of the toffee apple & caramelised onion jam and the ciabatta
