2 Cpancake mix
1.5 sticksmargarine
room temperature
½ csugar
0.5 Cbrown sugar
1egg
2 tspvanilla
1 cupchocolate chips
Waffle Iron Version
Instructions

Step 1
Preheat oven to 350 degrees.

Step 2
With a hand mixer or in a stand mixer, beat butter and sugars until fluffy. About 3 minutes.
Step 3
Add eggs and vanilla. Mix well.
Step 4
Fold in pancake mix and chocolate chips. Mix only until combined. Do not overmix.
Step 5
Scoop out dough balls with a tablespoon. Use 2 tbsp of dough per cookie. Roll in your hands to make round.
Step 6
Place on a lined cookie sheet and press down on the balls slightly. Leave a couple inches of space between each dough ball.
Step 7
Bake for 10-12 minutes until golden brown.
Waffle Iron Version
Step 8
Mix all ingredients in a large bowl with a fork. Careful to not overmix.
Step 9
Let batter rest for 10 minutes while heating the waffle iron to its medium setting.
Step 10
Using 1/4 C measuring cup, pour batter into the center of the waffle iron. Close and let cool for 4 minutes. You’re looking for them to be darker than a normal waffle.
Step 11
Remove and let cool on a cooling wrack before decorating.
Step 12
Drizzle with melted chocolate and sprinkle on sprinkles or chopped chocolate chips to decorate.
