Instructions

Step 1
Line two standard-size baking sheets with parchment paper and set aside.
Step 2
Place one sheet of thawed puff pastry on a floured work surface; keep the second sheet wrapped and refrigerated until needed. Lightly roll out pastry so that the length (perpendicular to fold lines) is about 12 inches.
Step 3
Cut along the fold lines to produce three 3" x 12" strips. Cut each strip in half, then in half again to make four 3-inch squares. This will make 12 squares in all.
Step 4
Set a pastry square in front of you on the diagonal. take two pieces of asparagus (spear tip and bottom) and place horizontally on the square (from point to point).
Step 5
Add a few julienne tomato strips and two teaspoons of cheese. Fold the bottom point of pastry up over the filling and roll up to close. Add egg wash to seal the seam. Place seam side down on prepared baking pan.
Step 6
When all 12 puffs are done, place pan in refrigerator. Preheat oven to 400°. Repeat process with the second sheet of puff pastry.
Step 7
Once all puffs are prepared, brush each with egg wash. Bake in preheated oven 15 minutes, until golden brown.
Step 8
Serve warm or at room temperature.
