Step 1
Heat the oil in a lidded saucepan. Add the shallots and cook until soft, about 3 minutes. Add the garlic and cook for a further minute
Step 2
Add the cumin and paprika stir to coat the shallots and cook for another minute.
Step 3
Add in the stock and couscous, turn off the heat and leave for 5 minutes with a lid on.
Step 4
Give it a stir and turn on the heat again. Add the chickpeas and spinach, warm through. Season and enjoy. π
