Preheat oven to 375

Place sweet potatoes, carrots and brussel sprouts on a sheet pan. Thoroughly coat with the oil. Sprinkle with the oregano, thyme, salt and pepper

While baking, heat a small pan with a bit of butter. Crack 1 or 2 eggs (as desired) into the pan and fry 2-3 minutes on each side until over easy.
