Instructions
Step 1
Chop up carrots, onions, celery and garlic
Step 2
Add olive oil to large pot, sauté vegetables for 3 minutes
Step 3
Add chili flakes, Italian seasoning and parsley
Step 4
Pour in your stock, bring to a boil then add orzo

Adjust seasoning with salt and pepper

Cook for 8 minutes, add spinach and green onion, cook until orzo is al dente
Step 7
For a vegetarian option, remove portion off to the side, garnish with Parmesan cheese, green onion, lemon zest (optional), and more chili flakes then serve
Step 8
Add shredded chicken to the soup (optional) let simmer for 3 minutes, garnish and serve
