Instructions

Step 1
Preheat the oven to 180C

Spray thetart tin with the cooking spray and line with puff pastry. Lift the edges and gently fit the pastry into the pan., then poke with the fork. Trim the edges and freeze for 15 minutes. Line with baking paper and weights(beans or rice) and blind bake for 20 minutes.
Step 3
Meanwhile, in a large pot bring water to a boil, add salt and cauliflower. Cook for 5 minutes, then rinse with cold water and set aside. Add broccoli to the same pot and cook for 3 minutes. Rinse with cold water and set aside.
Step 4
Divide the cauliflower and broccoli into florets. Using vegetable peeler cut carrot into strips and cut the asparagus tip. Cut the head of purplelicious broccoli .
Step 5
In bowl, using a hand mixer whisk together eggs, cheese, milk, salt, pepper, nutmeg and Mediterranean mix.
Step 6
When pastry is ready, remove the weights and fill the tart with egg mixture.
Step 7
Assemble the veggies on top. Combine olive oil with salt, pepper and garlic granules and brush the veggies.
Step 8
Bake for 30-35 minutes or until ready.

Let it cool and enjoy!
