Beet Muffins

"Veg sweets" are fairly common in Japan for girls. And young mothers often make vegetable based sweets by themselves for their kids who don't eat enough veg. I've been to a specialist cake shop in Tokyo that uses vegetables as its main ingredient. I had nice creamed sponge cake with a topping of a mini tomato, instead of strawberry. It was cute and tasty. These are colourful and healthy treats for O'Bento for kids and adults. The green muffin has a surprising green tea flavour! Spinach and green tea are both types of leaves. Pink muffins made with beets are already popular in Japan.

Instructions

Step 1
Preheat oven to 180°C

Roughly chop the cooked beets and blend into a puree. Watch out for splashes! A tea towel or - kitchen paper can help shield.
Step 3
Add yoghurt, butter, egg, to the puree and mix together.
Step 4
Add spelt flour, baking powder, sugar, and fold them together. Add raspberries then mix gently.
Step 5
Divide the dough into a muffin. tin - again you can place them straight into the tin.
Step 6
Bake for 20-25 minutes.
