Ingredients
4 servings
1chicken breast
⅓ cupblack beans
optional
1bell pepper
½ cuponion
or 1/4 tsp onion powder
1jalapeño
with seeds
4green chilies
small
1 cupcilantro
¼ cupgreen onions
or one stalk
1 Tbsplemon juice
1 tablespoontaco seasoning
a little less
1 TbspChili pepper flakes
1 tsppepper
¼ tspsalt
olive oil
tortillas
large
marinara sauce
cheddar cheese
monterey jack cheese
Greek yogurt
plain
Instructions
Step 1
Chop the chicken breast into small, evenly sized pieces
Step 2
Heat a pan with olive oil and some chili flakes
Step 3
Cook the chicken pieces on medium heat until slightly brown (approx. 10 mins), mixing throughout. Can add more chili flakes
Step 4
Once done, transfer chicken to a plate
Step 5
In the same pan, cook the jalapeños and the bell pepper (and optional beans) until softened and slightly browned
Step 6
On low heat, add chicken to the veggies, 1/4 cup water, and taco seasoning (+optional splash of lemon juice)
Step 7
Mix until liquid is absorbed (can also add chili flakes or sriracha here if not spicy enough)
Step 8
Transfer chicken + veggies back to the plate once done
Step 9
Heat some oil back on the pan and add a tortilla
Step 10
Leaving 1 inch space, add 3-4 tbsp of the cooked chicken + veggies
Step 11
Add cheese, a dollop of marinara sauce and any optional toppings (green onions/cilantro)
Step 12
Cook both sides of the tortilla until golden (flip from the opening side otherwise topping will spill out)
Step 13
Serve with Greek yogurt and Marinara sauce
