Step 1
Slice and tenderise chicken
Step 2
Cook rice

Step 3
Thinly slice onion

Step 4
Combine chicken, sea salt and black pepper. Also add half of the garlic and ginger.




Step 5
Cook chicken, add onion when it has two minutes left to cook
Step 6
Add spices, remaining garlic and ginger and stir for one minute








Step 7
Add chicken stock and stir for one minute

Step 8
Add coconut milk and add a touch of salt for taste. Bring to a simmer.


Step 9
Let it sit on a low to medium heat for a few minutes.
