Ingredients

For the sauce
4garlic cloves
finely chopped
fresh ginger
2.5 cm, finely chopped
1red chilli
deseeded, finely chopped
0.25red pepper
sliced into strips
2tomatoes
sliced
5 Tbspwater
2 Tbspketchup
1 tsplight brown sugar
For the chicken
Instructions
Step 1
For the sauce, place ingredients into food processor and blend until smooth
Step 2
for the chicken, heat the oil in the pan and add the chicken. Stir fry for 2-3 minutes
Step 3
Add courgette and red pepper, fry for 2 more minutes
Step 4
Pour in the sauce and bring to boil. Cook for further 2-3 minutes
Step 5
Season with soy sauce and serve with rice.
