Fettuccine René
René was chef at the White House under JFK. Fettuccine noodles were not readily available at that time so I used Fideo, slightly bigger than angel hair. I now use angel hair.

Ingredients
4 servings
2 shallots, chopped
1 cup chicken stock or broth
1 cup sour cream
Instructions
Step 1
Cook fettuccine in boiling salted water until tender, drain thoroughly.
Step 2
Sauté shallots in butter for a few minutes,
Step 3
Stir in chicken stock or broth and boil for 3 minutes.
Step 4
Remove from heat and gradually stir in cream, sour cream, Parmesan cheese, and chives.
Step 5
Toss the mixture well.
