Instructions

Step 1
In a bowl mix together sauce ingredients and set aside.
Step 2
Heat 1 tsp oil in a pan, add beaten eggs and swirl around pan, cook over low heat until starting to colour and flip, repeat and remove. Roll up like a wrap and slice.
Step 3
Heat oil in a large pan, add garlic& ginger, cook for 1-2 mins, add chilli paste. Add in chicken, season well and cook for 7-10 mins until cooked through.
Step 4
Cook noodles according to packet instructions.
Step 5
Add pak choi & spring onion to pan and cook for 3-5 mins until softened.
Step 6
Pour in sauce, add noodles and mix together. Add egg.
Step 7
Serve with chilli oil or sriracha on top.
