Ingredients

1 ½ Tbspgarlic infused olive oil

3skinless boneless chicken breasts

Frozen onion

50gfrozen peas

1 Tbsptomato puree

2 Tbspgarlic paste

2 cmginger
piece, grated

2 x 250gbasmati rice
packets cooked

3 Tbsplow salt soy sauce

1juice lime

2eggs
beaten

ground black pepper

Instructions
Step 1
Add onion to hot pan, cook for 5 mins till soft
Step 2
Add 1 tbsp tomato paste, garlic and ginger
Step 3
Add the frozen peas, packet rice and lime juice, cook for a couple of mins till the rice has warmed up and coated with flavour
Step 4
Add the chopped chicken and stir well. Make a well in the centre of the pan. Pour in the beaten egg, gentle start to incorporate the rice into the egg, stirring to cover every grain of rice
