Here's a simple and great way to cook chicken breast in the oven. High heat is the trick here to avoiding dry meat. A touch
of brown sugar in the seasoning also helps create a sauce!

Preheat the oven to 220°C (200°C fan-forced).

Seasoning - Mix the seasoning ingredients in a small bowl.

Prepare chicken - Place the chicken. smooth-side down, on a work surface. Cover with

a sheet of baking paper or plastic wrap and, using the flat side of a meat mallet, rolling pin

or a small frying pan. flatten until 2 cm thick at the thickest part.

Place the chicken on a baking tray. Rub the chicken on both sides with the olive oil, then

use your fingers to sprinkle evenly with the seasoning.

Cook chicken - Bake the chicken for 15 minutes or until the internal temperature is 67°C

(it will rise to 71°C once rested).

Serve - Remove the tray from the oven and immediately transfer the chicken to serving

plates. Scrape the tray juices over the chicken. Rest for 3 minutes before serving!
