Step 1
* Pre heat Pit Boss griddle to medium.
Step 2
* Place corn kernels, flour and Cajun seasoning in a large bowl. Stir to combine.
Step 3
* Add the eggs and milk. Stir until a thick batter forms. Add the bacon (leave some aside for topping) and mozzarella cheese and gently stir to combine.
Step 4
* Place about 2 tbsp size mounds of the fritter mixture on griddle, then flatten them.
Step 5
* Cook the fritters for about 3 minutes per side, or until they're golden brown and crispy.
Step 6
* Top with bacon and drizzle with honey.
