1 tblspolive oil

2 x 14 ozcan black beans

0.5zucchini
sliced

0.25onion
sliced

0.5sweet potato
sliced

2 tspcumin

2 tspgarlic powder

1 tspchili powder

1 tspblack pepper

½ cuppanko
Homemade BBQ sauce
Instructions
Step 1
Heat olive oil in pan over medium heat
Step 2
Add in onion, black beans, zucchini, and sweet potato and saute ~5 min
Step 3
Add 3 tbslp water and spices to pan and cover
Step 4
Stir occasionally until vegetables are tender
Step 5
Once vegetables are tender, remove lid and evaporate remaining liquid
Step 6
Once mixture has thickened, allow to cool ~3 min before placing in food processor along with homemade BBQ sauce
Step 7
Gently chop/pulse until mixture looks rough, but even
Step 8
Place burger mix in bowl in fridge to cool ~30 min
Step 9
Heat oil in pan and form burger patties/ meatballs
Step 10
Once oil is heated, cook each side until brown (~7 min/side)
