Shrimp Pad Thai
Few tips:
•Pad Thai Noodles - I soak the noodles in room temp water before cooking to soften it up a bit
•Prep all ingredients before you start cooking to make the cooking process easier
•Preserved Radish - Optional to add if you prefer I didn’t have any on hand so I left it out

Ingredients
2 servings
10 ozPad Thai Noodles
soak noodles for 20 minutes in room temp water then drain
3 Tbspneutral oil
1clove garlic
minced
1Shallot
large, minced
6 ozTofu
cut into cubes
10Shrimp
Large, deveined & peeled
2Egg
lightly whisked
½ cupchives
or spring onion, cut into one inch length
1 cupBeansprouts
¼ cupCrushed Peanuts
or more
Pad Thai Sauce
Instructions
Step 1
In a large wok or pan on med high heat
Step 2
Add Neutral Oil, Tofu, fry until all sides are a golden brown, remove & set aside
Step 3
Add Shrimps, cook for 1 minute each side, remove & set aside
Step 4
Add Shallots then Garlic, stir until fragrant
Step 5
Add Pad Thai Noodles, Pad Thai Sauce, stir
Step 6
Add Fried Tofu & Shrimp
Step 7
Stir then push to one side of the pan
Step 8
Add Eggs, wait 30 - 45 seconds then slowly scramble the eggs
Step 9
Mix eggs into the noodles
Step 10
Add Beansprouts then Chives
Step 11
Stir then sprinkle in crushed peanuts
Step 12
Stir again then remove from heat
Step 13
Add to a serving dish, serve with a side of beansprouts, limes, crushed red pepper flakes, crushed peanuts & sriracha
Step 14
