My recipe for Thai drunken noodles (pad kee mao), made with your choice of protein and veggies and the most irresistible Thai basil sauce.

Ingredients

3 Tbspoil
4garlic
cloves, chopped
6Thai chilis
chopped
16 OuncesWide Rice Noodles
1 poundground chicken
or turkey
½ cupchicken broth
3 Tbspfish sauce
3 Tbspdark soy sauce
3 Tbspgolden mountain
1 tspsesame oil
2 Tbspsugar
2green bell peppers
cut into strips
2Plum Tomatoes
Large, each cut into 6 wedges
½ cupfresh basil
Instructions
Step 1
Place noodles in warm /hot water for at lest 15 min until needed.
Step 2
Meanwhile, heat oils in a wok over medium-high heat. Add garlic and Thai chiles; saute 1-2 minutes.
Step 3
Add chicken and cook whole breaking up.
Step 4
bell pepper and cook another 2 min
Step 5
Add broth and noodles
Step 6
Add 5 seasonings and toss to coat
Step 7
Add tomatoes and continue to cook until noodles are soft
Step 8
Add basil and toss briefly until wilted
