Chicken Fried Cauliflower "Rice"
this nutrient dense vegetable rich meal is great for breakfast, lunch or dinner. serve with Napa cabbage salad with ginger cilantro dressing.

Ingredients
5 servings
1 headcauliflower
coarsely chopped
2 tablespoonsextra-virgin olive oil
1zucchini
small, diced
1 cupfresh peas
or frozen
2 cupsnapa cabbage
sliced
3 tablespoonscoconut aminos
½ teaspoonsea salt
¼ teaspoonwhite pepper
freshly ground
0.5white onion
diced
2carrots
large, diced
2 teaspoonsfresh ginger
grated
0.5 poundskinless boneless chicken breasts
organic, or thighs, chopped
5shiitake mushrooms
sliced
1 cupfrozen peas
fresh cilantro
chopped, optional for serving
green onions
sliced
Instructions
Step 1
Place the chopped cauliflower in a food processor fitted with the "s" blade.
Step 2
Pulse until the cauliflower is broken down into tiny, rice-like pieces, and set aside.
Step 3
Heat the oil in a deep 11- to 12-inch skillet over medium heat.
Step 4
Add the onion, carrots, celery, and ginger; sauté for about 5 minutes.
Step 5
Then add the chicken and sauté for a few minutes more.
Step 6
Next add the mushrooms and zucchini; sauté for 2 minutes more.
Step 7
Add the minced cauliflower and stir it into the chicken-vegetable mixture; sauté for about 7 minutes.
Step 8
Add the peas, napa cabbage, coconut aminos, salt, and white pepper; sauté for another few minutes.
Step 9
Taste and adjust the salt and seasonings, if desired.
Step 10
Garnish each serving with sliced green onions and cilantro.
