Instructions
Step 1
First, prepare the sauce.
Step 2
Heat the sesame oil in a small pan over a medium-low heat.
Step 3
Add the garlic and chilli to the hot oil.
Step 4
Add the chopped ginger and fry for 1-2 minutes, then whisk in the yoghurt and warm until bubbling.
Step 5
Simmer for 5 minutes then add the honey, lime juice and soy sauce.
Step 6
Whisk in the crunchy peanut butter and simmer for a further 2-3 minutes, then set aside.
Step 7
Bring a large pan of salted water to the boil then add the broccoli and boil for 5-6 minutes, until cooked but still a little firm in the middle.
Step 8
Drain the broccoli and run it under cold water, then shake dry.
Step 9
Heat the sesame oil over a high heat in a large frying pan or wok.
Step 10
Just as the oil is beginning to smoke, add the broccoli and carrot and fry, stirring every 30 seconds or so, for 4-5 minutes.
Step 11
Turn off the heat, then pour in the satay sauce and add the roasted salted peanuts.
Step 12
Mix everything together and serve straight away with steamed basmati rice.
