Ingredients

1 lbground turkey
0.5yellow onion
diced
15 ozcan no-salt-added tomato sauce
2 Tbspno-salt-added tomato paste
1 Tbspapple cider vinegar
1 Tbsphoney
1 Tbspsplenda
1 Tbsplight soy sauce
1 tspmustard powder
ground cinnamon
¼ tspblack pepper
1red bell pepper
diced
1green bell pepper
diced
2 tspminced garlic
1jalapeno
seeded and minced, optional
2 lbsweet potatoes
scrubbed and diced, skin on
Instructions
Step 1
Preheat oven to 450 degrees.
Step 2
Roast diced sweet potatoes for 30 minutes, or until soft. (I usually spray the pan and potatoes with olive oil spray)
Step 3
While potatoes are roasting, brown the ground turkey and onions over medium-high heat. Drain off any grease.
Step 4
Add the tomato sauce, tomato paste, apple cider vinegar, honey, Splenda, soy sauce, mustard powder, cinnamon, and pepper. Simmer and stir for about 5 minutes.
Step 5
Serve the sloppy joes over the roasted sweet potatoes.
