Instructions

Step 1
PREHEAT the oven to 425°F.
Step 2
SEASON the turkey with the salt and black pepper.
Step 3
Heat the oil in an oven. proof skillet over medium-high heat.
Step 4
Add the turkey and cook until browned, 2 to 3 minutes per side.
Step 5
REMOVE the turkey from the skillet.
Step 6
Add the bell peppers, chile, onion, and garlic to the skillet and cook, stirring occasionally, until just softened, 3 to 5 minutes.
Step 7
Stir in the tomatoes and vinegar.
Step 8
RETURN the turkey to the skillet and transfer to the oven.
Step 9
Roast until the turkey is cooked through, 25 to 30 minutes.
Step 10
Let the turkey rest 5 minutes then cut into slices.
Step 11
Top with the basil and serve.
