Ingredients
4 servings
1 clovegarlic
finally chopped
2 Tbspolive oil
3 Tbsplemon juice
Sea salt
or Himalayan salt
ground pepper
to taste
2cans of solid white tuna
packed in water, drained
1can of white beans
drained, rinsed
1red onion
medium
1cucumber
medium
2tomatoes
medium
½ cupartichoke hearts
packed in water drained, chopped
0.5 bunchfresh parsley
stems discarded, chopped
Instructions
Step 1
Combine garlic, oil, and lemon juice in a small bowl; whisk to blend. Season with salt and pepper if desired. Set aside. Combine tuna, beans, onion, cucumber, tomatoes, artichoke hearts, and parsley in a medium bowl; mix well. Drizzle mixture with dressing; toss gently to blend. Evenly divide spinach between 4 serving plates. Top evenly with tuna mixture
