For the bowl
Instructions
Step 1
Drain the banana blossom and break it up with your hands
Step 2
Heat the oil in a large pan/wok and fry the onion, fry for 5 mins
Step 3
Add the garlic, chilli and ginger and fry for 5 more mins
Step 4
Add the banana blossom and fry for 5 mins
Step 5
Pour in the coconut milk and soy sauce, season with salt and pepper and bring to the boil
Step 6
Place lid on pan and simmer for 15 mins, stirring once or twice
Step 7
Meanwhile cook the noodles and steam the broccoli
Step 8
Add the spinach and lime juice to the pan to wilt the leaves
Step 9
Divide the noodles between 2 bowls, top with curry and garnish
