Instructions
Step 1
Wash the lentils thoroughly and leave to dry.
Step 2
Add enough oil to cover the bottom of the pan (doesn’t need a lot). Fry onions until half cooked.
Step 3
Add in carrots, then eventually add in potatoes (cut into cubes), garlic and fry until it’s cooked down.
Step 4
Add in lentils and fry until it goes yellow.
Step 5
Add water to cover the top (you can add more) and chicken stock and let it boil down for a bit. After it’s boiled down a bit turn the heat down and let it simmer.
Step 6
Once it’s cooked blend it down then season.
Step 7
Strain the soup a couple of times then fry butter and red pepper flakes and add to soup.
