Instructions

Step 1
Bring a large pot of water to boil. Salt and stir.
Step 2
Put olive oil in large skillet over medium high heat. When oil is hot add onion, garlic, salt and pepper and cook 2 mins or until soft.
Step 3
Add the tomatoes and bring to a boil. Turn the heat down so that the mixture bubbles gently and cook, stirring occasionally, while you cook the pasta. Donโ€™t let the sauce get too thick.
Step 4
Cook pasta in the boiling water until it is just starting to soften but it is still too hard to eat. Drain it and toss it with the sauce and about half the mozzarella. Grease a large baking dish (9x13) and pour or spoon mixture into it. Top with the remaining mozzarella and the parmesan if youโ€™re into that kind of thing. Bake until the top is browned and the cheese is bubbly, about 20 to 30 mins.
