Instructions

Step 1
EQUIPMENT I large mixing bowl I small mixing bowl 1 small bowl for melting the butter in m/wave (15 seconds) Grease proof paper 2lb loaf tin Grease proof paper Tin foil Cooling rack
Step 2
Set the oven to 165c fan. Mix flour, sugar, bicarbonate and salt in a large bowl. In another bowl mix the egg and yolk together, add in the yoghurt, the melted butter, and mashed bananas. Combine the wet ingredients into the dry and bring together gently folding in. Do not over mix. Add most BUT NOT ALL of the chocolate and nuts. Fill the buttered and lined 2lb loaf tin. Spread the cake mixture evenly. Sprinkle the remaining nuts and chocolate on top. Bake for 50 minutes. Check with a skewer and if not cooked cover the top with foil and bake for a further 10 mins. Leave to cool for 15 mins before turning it out to cool completely.
